Adorable “Unicorn Macarons” Are Petite Pastries With a Magical Twist

We always prefer our dessert with a side of magic, and the unicorn macaron trend is an adorably mystical way to enjoy these delectable confections. Made famous by the Mac Lab Bakery in Duluth, Georgia, the petite pastries are about as delightful as they come. Texture-wise, the French treats are crispy on the outside but chewy and creamy as you bite into them. This delicate combination also makes them a challenge to bake, so you won’t see them everywhere—sort of like a unicorn.

To add some sparkle to an otherwise ordinary macaron, bakers will first use custom-made templates that fashion ears and a horn to the circular confections. Often, their filling is just as magical, with some (like Mac Lab) using Fruity Pebble cereal or pastel-colored creams. Once assembled, the outside of the cookies are adorned with tiny painted flowers, eyelashes, and even blush. Like many incredible foods, these creatures seem almost too good to eat. But it’s hard to resist a macaron, even when it does look like a unicorn.
